Gin Fizz Cocktail

The Gin Fizz Cocktail is a light and refreshing beverage that is easy to make. Gin, lemon, and simple syup are shaken with aquafaba to make a rich foam top.

Ingredients

  • 2 ounces gin
  • 1 ounce lemon juice
  • ½ ounce simple syrup (see note)
  • ½ ounce aquafaba (see note)
  • ice
  • 2 ounces club soda

Instructions

  • Shake 2 ounces gin, 1 ounce lemon juice, ½ ounce simple syrup, and ½ ounce aquafaba together in a cocktail shaker with no ice vigorously for at least 10 seconds. Keeping the ingredients in the shaker, the shaker with ice, and continue to shake for at least another 10 seconds. Strain into a chilled narrow glass with straight sides. Top with 2 ounces club soda.

Notes

Simple syrup is simply equal parts sugar and water, dissolved over heat. You can make more than you need (say ½ cup sugar and ½ cup water) and store in a bottle in the fridge for several weeks.
Using ½ ounce simple syrup makes a not-so-sweet cocktail, which is how I prefer mine. If you like them sweeter, add up to ½ ounce more simple syrup.
Aquafaba is the leftover cooking liquid from cooking beans, typically chickpeas. You can get it from cooking chickpeas at home, or the liquid that comes in canned chickpeas. It can be used as a vegan substitute for egg whites in many cases. If you don't have aquafaba, you can use one egg white instead, but be aware of the risk of salmonella from raw eggs.
