Whole Wheat Pasta with Fresh Tomatoes and Herbs

This is a quick and easy summer pasta. The only cooking involved is boiling the water for the pasta.

  • 1 ½ pounds fresh ripe tomatoes, cored and cut into ½" pieces
  • 3 Tablespoons minced fresh basil
  • 1 Tablespoon minced fresh oregano
  • 1 clove garlic, minced
  • ¼ cup olive oil
  • Salt and pepper
  • 1 pound whole wheat pasta (Use Gluten Free if you need this recipe to be Gluten Free)


  • Stir tomatoes, herbs, garlic and oil together in a medium bowl. Add salt and freshly ground pepper to taste. Set aside.
  • Bring water to boil in a large pot. Add 1 tablespoon salt and water. Follow directions on pasta to cook to al dente. Reserve ½ cup of the pasta cooking water. Drain pasta and return to pot. Add the tomato sauce and toss to combine. Add some of the pasta water if needed to thin sauce.
