Bacon, Avocado, and Tomato Sanwich

Use up your fresh, garden tomatoes by adding them to my favorite summer sandwich - the Bacon, Avocado, and Tomato Sandwich.

Ingredients

  • 2 medium slices crusty bread (like sourdough)
  • ¼ medium avocado thinly sliced or mashed
  • 2 slices bacon cooked crisp
  • 1 medium tomato sliced
  • salt and pepper

Instructions

  • Lightly toast bread, if desired. Layer avocado slices (or spread mashed avocado) on each slice of bread. Top one of the slices with the bacon and tomato. Season generously with salt and pepper. Eat immediately.
