Easy Rhubarb Parfait

These easy parfaits are a delicious mixture of homemade rhubarb compote, rolled oats, and your favorite Greek yogurt. Perfect for a healthy breakfast or dessert.

Ingredients

  • 1 cup rolled oats
  • 2 cups rhubarb compote
  • 2 cups plain or vanilla Greek yogurt

Instructions

  • If you want to make your parfait look beautiful, layer 2 tablespoons of rolled oats in the bottoms of 4 glasses or dessert dishes. Add ¼ cup Greek yogurt, then ¼ cup rhubarb compote. Repeat the layering with the remaining oats, yogurt, and compote. Top with an additional dollop of yogurt and a sprinkle of oats, or with fresh fruit as desired.
  • If you don't need your parfaits to look beautiful, simply add ¼ cup oats and ½ cup each Greek yogurt and rhubarb compote to 4 dishes. Mix and enjoy.

Notes

These parfaits can be made ahead of time, in which case the oats will soften. Keep refrigerated and cover with plastic until ready to eat.
