4ouncesmild white cheese (such as Havarti, Swiss, Muenster or Mozzarella),thinly sliced
4ouncesroast chicken, turkey or ham,thinly sliced

Instructions
Whisk egg and milk together in a small bowl. Season with salt and pepper. Pour into a shallow dish, like a plate or pie dish. Set aside.
Spread mustard on two of the slices of bread, if using. Place 1 slice of cheese on each slices of bread. Place 2 ounces of the meat on top of two of the slices of bread. Place the other slice of bread (with the cheese facing towards the meat) on top.
Melt the butter in a 12" non-stick skillet or cast iron pan over medium heat. Dip both sides of each sandwich into the egg mixture. Place into the skillet and cover. Cook until the bottom is golden brown, about 3 minutes. Flip sandwiches and cook, covered, until the other side is golden brown, 3-4 more minutes.
