Toss 9.5 ounces unsalted raw mixed nuts with 1 Tablespoon olive oil and 1 Tablespoon maple syrup in a large bowl. Add 1 Tablespoon minced fresh rosemary, 1 teaspoon kosher salt, 1 teaspoon brown sugar, and 1/4 teaspoon cayenne pepper. Toss well to evenly coat the nuts.
Spread nuts on the prepared baking sheet and bake until very fragrant and golden brown, about 18-22 minutes, stirring every 5-7 minutes. Cool before serving.
Notes
The bag of nuts I purchased came in a 9.5 ounce size. If yours is close to this (8-12 ounces), use the recipe as written. If you have a one pound (16 ounce) bag, double the recipe.
