These Roasted Chile Lime Nuts are the perfect snack! A little spicy, and a little sour, these flavor-filled nuts are also very easy to make.
Mr. Dreamboat recently brought us a snack from the US after he visited for a work trip. Specifically, he brought it for my son. The snack was a big bag of Tajin Dry Roasted Pistachios from Costco. These aren't available in Canada, and he went out of his way to get them for my son who loves Tajin on everything.
They were good. We all loved them, and since we can't get them here, I immediately thought about how I would go about making something similar. I studied the ingredient list, and it was very simple - it appeared to be just shelled pistachios and the ingredients that make up Tajin.
The problem was that I couldn't figure out how they got the seasoning to stick to the pistachios. The seasoning did seem to be "glued" on somehow, not just dusted on like it appears to be with some seasoned nuts. After pondering over the contents of my pantry, I had the idea of using chamoy to "glue" the Tajin on the nuts.
Guess what - it worked perfectly! The coating on the batch of nuts I made appeared very similar to the store-bought nuts we tried. And while I made my batch with mixed nuts, not just pistachios, the pistachios that were included in the mixed nuts tasted very similar as well. Overall, I'd say this is one of the most successful copycat recipes I've tried yet!
How to Make Roasted Chile Lime Nuts:
Making these Roasted Chile Lime Nuts is really easy - they take only a few minutes to prep, a few more minutes to cook, and about half an hour to cool. All said and done, you can be snacking on these addictive nuts in less than an hour.
Start by preparing a baking sheet with a piece of parchment paper or a silicone baking mat. Start heating up your oven. If you want to avoid heating up your kitchen too much, you can even use a toaster oven, but you might have to roast your nuts in more than one batch.

Pro-tip: many ovens pre-heat using both the top and bottom elements, which can cause delicate foods - like nuts - to burn if they're placed in the oven before the pre-heating is completed.
Pour the nuts into a large mixing bowl (see below for tips on which types of nuts to choose). Add the chamoy and Tajin and toss until all of the nuts are evenly coated. Spread the coated nuts evenly on the prepared baking sheet. Bake for 10-15 minutes, stirring once or twice during baking.
Let the nuts cool completely on the baking sheet before eating. Store the nuts in an airtight container or jar at room temperature.
Roasted Chile Lime Nuts Ingredients:
- Unsalted raw nuts (see tips below for more information on which types of nuts to look for)
- Chamoy - find chamoy in plastic bottles in Latin American markets, or in the Latin American food aisle of well-stocked grocery stores
- Tajin clasico - Find Tajin in most well-stocked grocery stores. Note that I used the regular version of Tajin here, but they also make a reduced sodium version, as well as spicier habanero version. If you prefer one of those, I don't see any reason why they wouldn't work for this recipe.
What type of nuts should I choose to make Roasted Chile Lime Nuts?
You can use whatever nuts you like; either one kind or a mix of several. But make sure you follow these guidelines to make sure your Chile Lime Nuts turn out great.
1. Choose nuts that are unroasted. Look for a package that says "raw".
2. Make sure your nuts are not seasoned in any way, including salt. Look for packages that say "unsalted".
3. I preferred this recipe with nuts that have a more neutral flavor. The pistachios, almonds, and cashews were my favorites from the mixed nut blend I used. I wasn't a fan of the peanuts with this seasoning, but you might be.

- 2 cups unsalted raw nuts see note
- 1 Tablespoon chamoy
- 1 Tablespoon Tajin clasico
Instructions
- Heat the oven to 350°F and line a baking sheet with parchment paper or a silicone baking mat. Set aside.
- Add 2 cups unsalted raw nuts to a medium mixing bowl. Add 1 Tablespoon chamoy and toss until all of the nuts are evenly coating. Sprinkle the nuts with 1 Tablespoon Tajin clasico and toss until the seasoning is evenly distributed.
- Spread the nuts in a single layer on the prepared baking sheet. Bake until the nuts are dry and starting to brown, about 15 minutes, stirring every 5-7 minutes. Allow the nuts to cool fully on the baking sheet. Store the roasted nuts in an airtight container or jar at room temperature.
