Instructions
Prepare a 9x13" baking pan by lining it with aluminum foil and greasing the foil. Fill a small saucepan with a small amount of water (1-2" deep). Place a glass or metal bowl over the pot, ensuring that the bottom of the bowl is not touching the water. Bring the water to a boil, then reduce the temperature to medium low so the water is just simmering.
Stir 1/2 cup unsalted butter, 1 cup creamy peanut butter, and 1/2 teaspoon kosher salt together in the bowl. Continue stirring until melted together. Add 300 grams butterscotch chips and stir until melted (If you don't have a pot and bowl that fit nicely together, use a microwave-safe bowl, and microwave in 30 second intervals, stirring after every interval until melted). Carefully remove the bowl from the pot and cool slightly (don't let it harden).
Stir 400 grams rainbow mini marshmallows into the butterscotch mixture (you may need to transfer to a larger bowl if your bowl was small). Transfer the mixture to the prepared baking pan and chill until set, about 30 minutes. Cut into small pieces and serve immediately or store in an airtight container or bag in the fridge or freezer.
